Butchered is a really strong word for this. The GC release looks a lot more impressive obviously, but the PS2 release is isn’t harmed on any functional level. It’s a content and feature complete port with no gameplay failings relative to the Gamecube.
Also there’s way more compelling lighting comparisons that could have been used. Lightning in the graveyard or lava under the manor for example.

But Sony was terrible with tech for ps1/ps2.

It looks and sounds like ass because of how much they had to compress textures, audio, and cutscene FMVs; but the fact that they managed to cram two entire cd roms into a single 64mb cartridge is absolutely an insanely impressive technical achievement.
