Most probably a mic issue in headphones which is causing the Google assistant to popup.
Does the Google assistant popup comes while doing other tasks like using Spotify or YouTube?

I canceled it in parameter just for that
some phones have a thing where google assistant pops up when you squeeze it, maybe its that
Ah yeah, Siri stopping everything while I’m playing happens often when I play with this certain pair of headphoens haha.
