Fun fact: the potato doesn’t actually give any power here. It’s a simple passive substrate with enough conductivity to allow current to pass. The power comes from the zinc being dissolved.
You can do the same in salt water and much denser stacks of metal sheets, which is how a voltaic pile is constructed and, indeed, copper and zinc was what Alessandro Volta used. Copper isn’t necessary, and any metal less reactive than zinc can be used.
The current capacity relies on how much area is in contact with the electrolyte (the potato in this case), to pass one amp you would need around fifteen square metres of zinc, and each cell has a potential of 0.7V (the theoretical ideal is 1.1V) so you’re looking at a PSU the size of a house which will run for a few hours at best.
