Are external SSD okay to game off of or are they a bit slow on a laptop? My GF laptop has a very small drive and want to get her an SSD for gaming. Is there anything specific I should be looking for? Preferably for USB-C port

If I were to upgrade just my cpu and gpu, is there anything more I’d need to do besides updating software drivers? Like would I need to reinstall windows, do any bios things, or something else?
Looking at upgrading my 5700xt and ryzen 5 3600 on a x570 board, and just curious if it is as simple as switching them out or if more needs to be done?
