Get in the car then back out. V will toss em on the ground where they can be looted
Cash into the car and the loot should stay behind.
move away from location until car despawn , when you return they should be a goodie bag on ground to collect , odds are it will be broken scrap so most players don’t bother .
edit : fast traveling may erase loot .
Get in, you’ll drag body out of car and then you can loot it

Check the trunk
try grenading the car – or doing something to blow it up. will take awhile to burn but then the wreckage and body will clear leaving you with a nice loot purse.
Blow the car up maybe. But honestly. It’s not worth caring about. Lol.
I’ve left the scene then came back later. The car and people were gone but the loot was left in a nice gift bag.
Skip time 1h from the menu. Despawns the car and bodies. They actually despawn under 1 hour but skip time works in 1 hour increments. Actual despawn would be around 5m to 10m i guess.
Use Autoloot from Nexus mods, it has a loot range modifier so you can loot by just looking at it from a distance
I don’t know if it’s reliable but I did it once when doing gigs for El Capitan.
Enter the vehicle to see V yank the body out. Drive forward or backward. Step out the vehicle and loot body.
Another time I did this, the corpse clipped into the road so… cross fingers.
