I have been trying to do this challenge in Warzone for the last few days and i have used the stun and flash grenade on the opponent both before I down them and after I down them and this bar hasn't moved a single bit, does anyone know why? 1 am gettimg so frustrated from trying to do this challenge day and night.

Have you tried without the Conversion kit?
There is a known issue in Warzone where weapon challenge camos may not appear to be counting on-screen. However, rest assured that once the challenge is completed (e.g., obtaining 25 kills with the FJX on a stunned or blinded enemy), the camo will unlock as expected. If you have completed the required kills and the camo still hasn’t unlocked, it may be due to a different issue.
