I just got a 5800X3D and a 6800XT last month, for an entire month, I had 0 crashes and now I crashed 2 times in 2 days.
On day 1 for the CPU, I did a curve optimizer with a -25 offset on all cores(instead of -30). I followed this guide and I set the TDC, EDC, and PPT values for better low 1% from the same video.
Similarly on Day 1 for the GPU, I have done a mild OC + mild undervolt in the Adrenaline software.
I'm abit confused to why I had 0 crashes for more than a month and suddenly now I have 2 crashes in less than 2 days.
I got these errors at the same time:

-25 on all cores….that’s your problem. 100% sure that is unstable. You need to check all cores individually. Some cores will be fine at -25, some of them only at -5.
Just to be sure:
Did you OC ram? What ram are you using?
Imo it was never stable to begin with, you just got lucky. -25 all core is not guaranteed at all.I recommend starting from -5 and test with Y-cruncher (i usually do 4hrs for stability)/AIDA SHA3 (10 runs in a row)/Occt core cycler at least 1h with the free version. For RAM (even XMP) try TM5 (extreme/absolut 5 runs), Karhu (minimum 1000%) and Y-cruncher (VT3) at least 1h.
Use a per core CO offset instead of all core. CoreCycler is a good tool that lets you test cores individually, and can adjust each core as necessary.
Did you even do stability test after -25?
