First time delidding with a throwaway cpu. Is there a layer of metal on the die that protects the actual silicon? Because im pretty sure a chunk of it got scraped off lol. It looks like patches of gold are showing as well, could that be burnt silicon?

That is the solder residue from where the chip was attached to the IHS.
You can scrape it off, and/or use liquid metal to eat away at it.
Don’t use anything metal to scrape, the solder is relatively soft and you don’t want to scratch the silicon.
