Centre screens will be two Sceptre P30s. Side screens will be flat 30-32″ screen oriented vertically. Most quad mounts look to go up to 27″ for the monitors. Any suggestions on how to quad mount?

I would use separate arms for the side monitors. Gives you more room to pivot them, and ideally, a wide height adjustment so you can bring them down into landscape mode on either side of your center monitor, or the same position, but higher up, with speakers underneath each side monitor.
Using separate arms also reduces the stress on a single point on your desk.
