Assuming you have access to the map specific buildables, perks, and wonder weapon(s). Personally I think I’d definitely do best in SOE, the Apothicon Servant goes crazy!

Ascension, assuming I don’t need to sleep, since in the zombies universe I’m guessing sleep isn’t a thing but could be wrong

Outbreak if I can just stay in the 1st region. If not, then Ascension. The spinning thing in spawn infinitely kills, so I don’t have to worry about ammo or damage

Buried. I can get Leroy to hold a zombie indefinitely, and the candy shop and saloon have more food and drink than any other map I can think of
