Pretty sure it won’t launch without updating but you can try I guess
Let’s say there is a workaround to playing it without updating it. You would just sit in queue literally for ever

You got history right there, make sure to back it up
First of all make a copy of it if you can. Just copy and paste the folder in another directory. If you can do it on a different drive.
No update, no work
Copy the entire game folder and paste into a different directory.
Unplug the Ethernet cable or turn off WiFi and try to run the game
