If you have bo3 then DE is a great map with bows that are similar to staffs and panzers as well. Also has a boss fight and is soloable
I feel like you beat all bo3 maps if you have done origins.
Some bo4 eggs might be harder. blood and ancient evil comes to mind as one of the harder ones

Zetsobu No Shima is a fun one. Easy to do on solo, easier than origins. But super satisfying to complete.
Moon is pretty straight forward. You get permanent pwrkaholic for the rest of the match too!

honestly any bo3 ee is great my favorite to try to speed run is shadows
