I think it’s just a design choice that they really committed to. As far as any real significance with regard to the game, I don’t really know. I’m sure there is someone, somewhere that has created a theory about the color yellow and its many meanings within the Cyberpunk universe.

most probably coz it stands out a lot compared to other games
and given the whole ff06 easter egg, the sequel might be magenta focused.

My personal gut feeling which is probably wrong
Neon colors probably
Back in the 1980’s (yeh I’m old) there was a stretch where impossibly bright neon yellow was all the rage. It was a very distinct color. Hell even I had a bright yellow jacket.
The table top was made back around this era. Give or take. And as a result there’s a lot of 80s style in this game, from the cars and punk hair styles and such.
So I wouldn’t be surprised if those bright neon colors are kept in as part of the 80s aesthetic.
Also. Like someone else said. It stands out compared to most regular cover art and such. And to go along with David’s motif.

It’s one of the game’s primary colours. So sticking with it makes it more recognisable in the long term.
I loved that they had Phantom Liberty be the “blackwall red”. Adds to its vibe of a standalone noir spy thriller.

A lot of people already said it, punchy neon colors were in science fiction. The 80s also had a lot of neon where the themes of the world are inspired. Plastic neon, turquoise, and bright yellow clothes contrast a dark dystopian nightmare. It kind of adds to the world in the sense that the people waking around are still living their lives and trying to stay sane. Not just in Cyberpunk world, but also in other movies and books that Cyberpunk draws inspiration from.

Yellow is the signature color of Cyberpunk 2077, it’s the background of the original game cover, the color of the Cyberpunk logo, and even Phantom Liberty gave everything a more yellowish-greenish tint. You see it in Edgerunners too, especially with David’s jacket. It’s like they keep coming back to it! It makes sense, it’s neon-like, it pops, and it fits perfectly in the Cyberpunk universe. There are also tons of amazing yellow jackets and outfits in the game.

I always had an understanding that yellow in cinema related to death or dying at least in horror

Like others have said it’s just a very bold colour that stands out next to anything else
It also allows for great contrast when putting anything on top of it

Yellow is the color of hope and happiness, which of course is all you fight for in night city but cruelly can’t achieve. So night city is all cheery from the outside but not from the inside.
The logical explanation is that it’s a easily reckognisable color, industrial, fun and “toxic” looking, completly compliments with the game’s identity.
However one might look too much into it, as Cyberpunk has a certain trope within its code. There are a few places and easter eggs in the game that opposes the colors of gold and magenta, following a buddhist belief that the gold color represents the golden path, whereas the magenta and its adjacent hues represent the path of doom. It’s a bit farfetched but one might appreciate the detail.

Also fun fact about that still. It’s David looking up at night city. Night citybitself is more than a place it’s a living thing that will beat you down mercilessly.

I think one thing not mentioned is the board game is called Cyberpunk Red and that naturally includes the color of the title and some of the details in the promo arts for it. To avoid confusion everything related to the game/anime is yellow to make it contrast.

Yellow is the color of piss and that is how Night City smells

It’s the color of bananas. As a reference to how everyday life in night city is bananas
