8600G Refuses to be stable with any RAM OC including an XMP profile. Its fine at 4800 JEDEC but it runs the games like dogshit in intense situations. I run the setup on the image 2 but just like the first one it can crash at any moment.

Did you try a basic 6000CL32 or even 5600CL40 1:1 Setup with VSoc <1.2V?
Rma the chip its probably faulty and if the replacement exhibits the same behaviour rma board as that might also be outright faulty
Once you get that sorted out 8400 seems to be a safe bet to aim for on the pheonix apus and the board will handle those speeds without issue
