Have that setup without a middle leg, don’t have any sag from the top at all. Could maybe see it if you have a triple monitor stand mounted to a single point, but otherwise should be fine without it.
Yes its more than enough
It might be better to have and not need, than need and not have. If you need to order an extra one how much will it cost to send it to you, probably more than $7.50. Where I live IKEA is far away and they don’t send stuff for free unless you buy a lot.
