To be fair, most of the time most enemies; especially bosses have more health than what we have.
Especially in many an rpg wherein they’re at least twice the health of the party combined.

Yeah, bosses usually have much bigger health pool than player, greater damage output, longer reach, gimmicks like teleportation or unblockable attacks, and all sorts of other things added to them. If all the stats and abilities remained the same but it was a PVP situation a lot of bosses would be nigh unbeatable, because their only weakness is predictable AI. So in a way they are a battle of attrition, and healing bosses only prolong that.
