Those case fans used are likely much louder and running at full speed all the time, that’s why they are cooling better than the stock GPU fans.
Also the performance of the fans could be better because they are much bigger.
more airflow = more cooling

Stock GPU fans are usually limited by the form factor of the card and by the fact that gpu manufacturers are cheap bastards

Looks > performance. I mean would you rather buy this or the solution that was in stock. That been said I used to run my HD 7950 for years with 120mm fans, works great.
Fluid dynamics.
Compare the size and thickness of the stock fans to those and you’ll have your answer.

Question: did you hook the fans directly to gpu or are they controlled through the motherboard?

the greatest GPU I ever had was a 1080ti with a frankensteined aftermarket heatsink carrying two NF-A12’S. I could run it at max and it would barely break 65c. wired directly onto the GPU’s pwm too.
problem was I was more young and reckless and didn’t really attach the mini heatsinks to the MOSFETs (or whatever they’re called). Not cleanly at least. Eventually it died.
Most quiet and efficient GPU I ever had the luxury of using. I don’t recommend doing it though.

Theres custom cooling systems by Arctic Cooling, one of them saved my 8800GT like 15 years ago, lowered from 105-110ºc to 65-70ºc while gaming:

This but with noctua ippc fans is how I used to mine crypto back in the day. Just a fair warning to anyone buying a gigabyte or zotac card, DONT.
Because stock fans have to look cool.
Had a dying AIO awhile ago so I took off the side panel and pointed one of those target desk fans directly into the PC at max speed and it kept the CPU below 65C during load lol

Cooling on Polaris cards sucked compared to today’s coolers. You can even throw something garbage like a Venus 2X cooler on a 580 and it’ll be cooled a lot better.
Also 120mm fans pass a ton more air through than 90mm fans at a similar dB, so it’ll do a better job on older gpus. Not so much nowadays with the gpu fans getting bigger and the fan and shrouds doing a better job with directing airflow.
Use cable ties ffs.
It likely needed new thermal paste since you know it’s like a 10 year old card

This is called deshrouding and it has huge benefits to temperature and also noise
