My first interpretation was draped over the back like a Red Dead bounty, but that seems like the perfect way to lose a finger or ten. Even if his hands were tied, maybe some light facial burns.
I imagined V just left him there like that for a second while V went inside to the garage to get some bungee cord or something to tie him to V in an upright position while riding.

I always supposed someone from the Alcecaldos helps V to transport Hellman to the Hotel. Because the scene is cut and after this we appear in the hotel room with Hellman tied up.
