I heard somewhere this isn't an actual jambalaya, but I know shit about american cuisine, can't judge our friend River trying to impress Lady V. But whatever he cooked looks delicious to me, it looks a lot like my home country's most famous dish, feijoada. Just add some black beans and voilà, you got a typical brazilian feijoada. You guys would love it.
